How to Use Your Basket

  • Prep the Basket: Before each use, generously dust the inside of the basket with flour (a 50/50 mix of regular flour and rice flour works brilliantly) to prevent the dough from sticking to the cane coils.
  • Insert the Dough: After shaping your loaf, gently place the dough into the basket with the smooth side down and the seam facing upwards.
  • Cover and Rest: Cover the basket with a damp tea towel, shower cap, or proofing cover to prevent the dough from drying out while it ferments and rises.
  • Turn Out to Bake: Once the dough is fully proofed, gently invert the basket over a piece of parchment paper, a peel, or directly into a Dutch oven. The dough will drop out gently, revealing the beautiful spiral pattern. (Important: Never place the basket itself inside the oven!)
  • Care & Cleaning: After use, simply tap out the excess flour. If wet dough is stuck, let it dry completely before brushing it out with a stiff, dry bristle brush. Store in a well-ventilated, dry place.
